Bourbon barrel aged Fur & Teeth : 11.2%
Brewed with rich imported floor malted English barley, deeply roasted chocolate and caramel malts, and conditioned on toasted coconut, Fur & Teeth is a chewy, monster of a beer. Aged in unrinsed 4 Roses bourbon barrels for 11 months, this complex winter warmer growls with notes of dark cocoa, burnt caramel, coffee, coconut, toffee, and vanilla.
Starless and Bible Black : 9.1% : Campfire Stout
Toasted Tahoe Forest pine bark, imported English Maris Otter and roasted malts. Conditioned on Ghana cacao nibs, and Madagascan vanilla beans. Chocolatey, roasty, warming, with a touch of campfire smoke.
The Little Destroyer : 7.1% : West Coast Extra Pale
The Little Destroyer, is bright, crisp, and has a gorgeous grapefruit pine character that lingers on the palate. Little Destroyer boasts generous amounts of imported pale malt and our favorite Caramel malt, Premium English Caramalt, which provides malty/biscuity flavor notes. Dry hopped with Simcoe, Centennial, and Citra hops.
Diving Bell : 5.6% : Honey Lager with Yarrow
Local honey from Halleluyah farms and organic yarrow flower. Bright and effervescent with notes of floral honey, lemongrass, and chamomile.
Invisible Door : 6.9% : Motueka Super Kölsch
Invisible Door utilizes top shelf German Pilsner and Vienna malts, white wheat, and is fermented with a fruity and crisp Kölsch yeast. After cold conditioning for a month, we dry hopped with a beautiful crop of lemon-forward Motueka hops. The result is a beer that pushes the boundaries of style; a citrusy crusher that is both intensely flavorful, and gently warming at 6.9%. Invisible Door boasts flavors of wheat cracker, honey, and lemonheads.
Tropticon : 4.7% : Pineapple Coconut
Gates of Delirium : 7.1% : Juicy IPA
The wolves passed well beyond the gates and dry hopped this juicy harbinger of haze with an insane amount of choice Strata, Citra, and Mosaic. Brewed with pillowy soft oats and wheat, and fermented with our favorite peach forward English yeast strain. Reason be damned, this beautifully soft and juicy ale pushes the limits of time and space into a fractalized realm of flavor.
Boca Ghost : 5.3% : California Lager
Historic California lager based on the Boca Brewing Company lager beer brewed 150 years ago. Copeland barley malt from 40 Mile Malt grown with Sierra Nevada runoff, Fresh Truckee water (known for it’s high minerality), and hops foraged in Truckee at New Moon Natural foods. The resulting beer is a delicate lager with notes of lightly toasted bread, biscuit, and a soft, creamy mouthfeel followed by gentle hop bitterness.
Mellow Gold : 5.5% : Golden Helles Lager
Beautifully delicate and crisp, Mellow Gold uses top shelf imported German barke pilsner malt; select floral hallertau hops; and a pillow soft water profile. Lagered for over a month, this hand crafted Helles is smooth, biscuity, and crushable.
Emerald Spectrum : 6.6% : NEIPA
We threw caution to the wind with our newest juice bomb and dry hopped with an insane amount of Mosaic, Amarillo, and El Dorado. The result is a beer that has an intense aroma of fresh satsuma mandarins and a touch of blueberry that we know and love from Mosaic. The aroma is so bright and citrusy you’ll swear there is fruit in this beer, but there’s not.
The Gray Witch : 3.8% : Dry hopped Grisette
Fermented with one of our favorite Belgian yeast strains and cold conditioned for 2 months before delicately dry hopping with a beautiful crop of lemony Motueka hops. While not necessarily typical for this style we find cold conditioning really helps to round out the flavors and contribute to a balanced and as the Belgians put it, “digestible” beer. The Motueka hops bring lemon zest and citrus flavors which perfectly compliment the clove and spice esthers.
In Velvet : 4.9% : Peach Sour
Popping with loads of fresh peach and beautiful pie crust wheat flavors, In Velvet is the newest fruited Berliner Weisse from the Wolf. We took our time with this delicately tart and balanced beer and we love how the peach flavor blossoms as it sits in the glass. Nice and dry (how we like it!) and strolling in at 4.9%, In Velvet is a beer that was made for Tahoe summer.
